Peanut Butter Energy Balls


These little peanutty balls of goodness will put a smile on your face, guaranteed!

1/2 cup organic crunchy peanut butter (honestly, use whatever you have)

2 Tbsp toasted flax seed (not a game changer if you don’t have)

1 cup raw oats (not quick oats – just your basic rolled oats)

1/4 cup honey

1/4 cup coconut flakes

1/4 cup mini chocolate chips (you can also use Trader Joe’s Cocoa Nibs if you want to add an extra punch)

1 tsp vanilla

Pinch of sea salt

Mix ingredients together and refrigerate for one hour. Roll into balls or use a cookie scoop (or melon baller) and put back into refrigerator over night. You can eat them now, and they are delicious BUT after sitting and letting the oats absorb all of the wonderfulness of the honey and peanut butter, they are out of this world awesome!
