Cranberry Scones


I LOVE cranberries. This recipe is one of my favorite. If you need more sweetness, you can drizzle with orange glaze. So good.

2 cups flour

1/4 cup sugar

1 1/2 teaspoon baking powder

2 eggs

1 teaspoon orange extract

1/4 teaspoon baking soda

1 stick butter (1/2 cup)

1/3 cup sour cream

2 cups fresh cranberries (I have also used dried cranberries, reduce to 1 cup)

In a large bowl mix together dry ingredients (flour, sugar, baking powder, baking soda).  Add butter to flour mixture using a pastry blender and mixing/working until crumb consistency is reached. In a medium bowl beat together eggs, sour cream, and orange extract.  Make a mound in the flour/crumb mixture, hollow out the center slightly, and add the egg mixture. Mix until just moistened and add cranberries. If using a scone pan, add dough to scone compartments. If not using a scone pan, turn the dough onto a floured surface, knead 10-12 times and roll into a ball. Flatten to approximately 1 inch in thickness and cut into wedges (see photo). Bake at 400 degrees for 13-15 minutes or until the edges are golden. Serve warm.
