Garlic Roasted Potatoes


This is hands down the easiest side dish!  Total prep time is less than 10 minutes, cooking time about an hour.

Yields:  5-6 servings

6-8 Yukon Gold potatoes, quartered

1-2 Tablespoons olive oil

1-2 Tablespoons minced garlic (amount depends on your level of garlic “love”)

1 teaspoon salt

1 teaspoon pepper

Preheat oven to 375 degrees.

Wash and quarter potatoes (do not peel).  Place in a large baking dish (I use a 13×9 inch lasagna pan).  Sprinkle in the minced garlic, drizzle the olive oil and add the salt and pepper.  Stir to coat evenly.  Bake for approximately 1 hour.

These potatoes turn out so yummy.  They get a little crispy on the outside and very soft on the inside.  My family loves potatoes this way.
