Quick Spanish Rice


Once you make this you will never buy the boxed rice again.  Promise.

Yield:  4-6 servings

1 can of stewed tomatoes (I just use whatever I have on hand, could be ready cut, whole or stewed)

1 1/2 cups chicken broth

1 1/4 cups uncooked white rice (not minute rice!)

1 Tablespoon butter

2 teaspoons chili powder

3/4 teaspoon oregano

1/2 teaspoon garlic powder

In medium saucepan, combine all ingredients.  Bring to a boil, cover and reduce heat; simmer 25 minutes or until rice is done.

I serve this with Enchilada Casserole, Street Tacos, Chicken Quesadillas or whatever other mexican favorite I am cooking up.  Enjoy!
