Once again my affinity for cranberries has taken over a perfectly good recipe for chocolate chip cookies! These will blow your mind!
Yield: 3-4 dozen cookies (depending on size)
1/2 cup butter, softened
1/2 cup vegetable shortening
1/2 cup granulated sugar
1/2 cup brown sugar
1 egg, beaten
1 teaspoon vanilla
2 cups flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 cup white chocolate chips
1/2 cup chopped, dried cranberries (I love Craisins)
1/2 cup macadamia nuts *optional – macadamia nuts and their delicate little crunch give these cookies awesome texture, but you can certainly leave them out without sacrificing the ultimate awesomeness
Preheat oven to 350 degrees
Cream the butter and shortening with sugars. Add the beaten egg and vanilla and mix until light and fluffy. Stir together the flour, salt and baking soda and slowly add to your awesomely fluffy butter/sugar mixture. Stir in the chips, cranberries, and nuts. Roll into 1 inch balls, place on a baking sheet and bake for 8 minutes. Watch the time with these. Baking longer than about 10 minutes will result in a crispy cookie (of course go for it if you prefer crispy to chewy). Let cool for a few minutes and then remove cookies from the baking sheet and place on a wire rack to finish cooling.
