Cranberries are just about my favorite food item. I have loved them my entire life so anytime I find a recipe with cranberries (or shampoo, lotion, air freshener, candle, etc) I have to try it. Yes, I know the first step is admitting you have a problem.
The cred for this recipe goes to my sister Lisa Sikes and to Linsey Haden. Thank you ladies for brightening my life with this recipe and for allowing me to post it here.
2 bags fresh cranberries
4 cups water
4 cups sugar
Baker’s sugar
Make a simple syrup with the sugar and water by mixing and heating on the stove. Before the mixture comes to a boil (just as the mixture starts to steam but before it bubbles) remove it from the heat and dump the cranberries in the pot and cover. Put in fridge. We usually try to leave the berries in the syrup for about 24 hours. Then pour off syrup. Put Baker’s sugar in a ziplock and spoon the wet berries into the sugar in small batches. Coat the berries well with sugar and then put on wax paper or parchment to dry.
Then we just put them out in a bowl and snack on them as you pass by. We eat them like candy and they are way better for you!!
Do not store them in an airtight container as the sugar will get moist and they tend to spoil quickly.
