Spinach Mushroom Sautee

This is a great side dish for chicken or pork.

1 Tablespoon olive oil

1 Tablespoon butter

1/2 pound fresh mushrooms, sliced

2 cloves garlic, minced

2 pounds fresh spinach leaves, cleaned and torn

1/4 teaspoon salt

1/4 teaspoon pepper

1/3 cup parmesan cheese

Heat oil and butter in a large frying pan on medium-high heat.  Add mushrooms and garlic, cook until mushrooms are tender.  Add spinach and cook/stir on medium heat 4 -5 minutes or until spinach is wilted but still bright green.  Season with salt and pepper and sprinkle with parmesan.  Serve warm.
