Bacon and Basil Penne

Yield:  4 servings

Sauce:

1/3 cup butter

1 1/4 cup heavy cream

1 clove garlic, minced

1 1/2 cups parmesan cheese

1/4 cup parsley, chopped

Melt butter and whisk in the rest of the ingredients, stir continually until heated through; cover and keep warm.

Penne

1 12 oz box penne pasta

1/4 cup butter

2 Tablespoons olive oil

1 Tablespoon fresh lemon juice (the kind you get in the produce section in the yellow bottle works just fine if you don’t have fresh lemons)

Pasta should be cooked until just tender, drain and add butter, olive oil and lemon juice. Cover and keep warm.

Bacon and Basil

4 slices thick cut peppered bacon

3 Roma tomatoes, diced

1/4 cup fresh basil, rough chopped

1 Tablespoon olive oil

Salt and pepper to taste

2  scallions, chopped

Fry bacon,  drain on paper towels and then dice into small pieces.

Mix bacon, tomato and basil together with salt, pepper and olive oil.

Add warm sauce to pasta and toss in bacon mixture just before serving.

Top with scallions, salt and pepper.  Enjoy!!
