Southwest Stuffed Peppers


This is one of my recipes that uses my Southwest Meal Starter concoction.  It’s meat, rice, corn, beans, and spices.  Delicious!

1/2 to 1 pound of Southwest Meal Starter

4 bell peppers (any color, I like yellow, orange and red as they have the best flavor) – cut in half and remove the seed pod

Shredded Cheese

Olive Oil

Salt

Preheat oven to 400 degrees.  Spray 13×9 inch pan with cooking spray.

Coat peppers with olive oil and a tiny sprinkling of salt.  Bake for 20 minutes.  Remove from oven and cool.  Stuff the peppers with prepared Meal Starter and cover with shredded cheese.  Bake for an additional 15-20 minutes.
