Southwest Meatloaf


This is a smaller version of the recipe that I use for my Southwest Meal Starter.  The only difference is that you aren’t stuffing anything…anything but yourself that is!

1 1/2 pounds of ground beef (or turkey, or a mixture of beef and turkey…you make the call.  You could even add chorizo and kick it up a notch!)

1/2 cup chopped onion

1 Tbsp fresh minced garlic

1 Tbsp taco seasoning

1 cup cooked rice

1/2 cup black beans

1/2 cup frozen corn

1 8oz jar salsa

1 small can diced green chilies

Preheat oven to 375 degrees.  Spray a loaf pan (or larger if necessary) with cooking spray.

Combine all ingredients in a large bowl, mixing well to ensure taco seasoning is evenly distributed.  If you don’t mind getting your hands dirty, this is a good time to roll up your sleeves and get down and dirty with your meatloaf.  Squish and mix until all ingredients are well acquainted!

Place meat mixture into your prepared pan and bake for 40-45 minutes (depending on your desired degree of doneness).  Serve with Jalapeño Cheddar Bread and a garden salad.
