Cranberry Orange Bread


I LOVE cranberries.  This bread is dense and sweet.  Yum!

Yield: 1 loaf

3/4 cup of orange juice

1 beaten egg

2 Tablespoons cooking oil (you can use vegetable or EVOO {extra virgin olive oil} – or substitute butter or margarine, whatever your preference. If you use butter or margarine, use melted)

1 teaspoon vanilla

2 cups flour

1 cup granulated sugar

1 1/2 teaspoons baking powder

1 teaspoon salt

1/2 teaspoon baking soda

1 cup dried cranberries, roughly chopped

1/2 cup walnuts, chopped  (optional)

1 cup powdered sugar

1 Tablespoon orange juice

In a small mixing bowl combine the orange juice, beaten egg, vanilla and cooking oil.  In another mixing bowl stir together the flour, salt, sugar, baking soda and baking powder. Add the orange juice mixture to dry ingredients and stir until just moistened.  Fold in the chopped cranberries (and nuts if desired).

Turn the batter into a lightly greased (I just use cooking spray) 8x4x2-inch loaf pan and bake at 350 degrees for 50-60 minutes or until a knife inserted into the center comes out clean. Cool bread 10 minutes in the pan and then remove from pan and place on a wire rack to finish cooling.

For glaze, mix 1 tablespoon orange juice with 1 cup of powdered sugar.  Add more juice if necessary to get a drizzly consistency.  Drizzle the glaze over the cooled loaf.

Make a steaming cup of tea and sit back and enjoy eating this one!
