This is a quick and easy alternative to my standard quiche recipe.
1 pound breakfast pork sausage
1 onion, chopped
1 red pepper, chopped
1 green pepper, chopped
1/2 cup salsa
12 ounces velveeta cheese, cut into small cubes
1 dozen eggs, beaten
1/3 cup sour cream
Preheat oven to 350 degrees and grease a 13×9 inch baking pan (I use cooking spray).
Brown the sausage. When no pink remains, add the onion and pepper and cook only until the onions are translucent (3-5 minutes). Drain and return to pan. Stir in the salsa and half of the cheese and spoon into prepared pan. Whisk the sour cream into the beaten eggs until well blended and pour over the sausage mixture. Top with the remaining cheese. Bake 40 minutes or until center is set.
This is yummy with fresh fruit.
