When I say “sauced”, I mean covered in sauce, not drunk. Although I suppose you could add tequila to this recipe pretty easily! <wink, wink> I stumbled upon this recipe after making way too much stuffing for my Southwest Stuffed Peppers, thus creating my Southwest Meal Starter. Cool huh! Frankly, you can throw just about anything in a tortilla, cover it with sauce and cheese and have an instant hit. Try these, you’ll love them. Seriously.
1/2 to 1 pound Southwest Meal Starter
Flour tortillas
Shredded Cheese
1 can red enchilada sauce (I like La Victoria)
Preheat oven to 375 degrees. Spray a 13×9 inch pan with cooking spray. (when I made this I made two pans; one 13×9 and one 8×8 so I would have leftovers. There was plenty of sauce just using one can for 2 pans).
Spoon the meat mixture into each flour tortilla and add shredded cheese; roll up and place in pan. Repeat until pan is full. Cover with red sauce and more shredded cheese. Bake for 20-30 minutes or until cheese is hot and bubbly. Serve with sour cream, sliced avocado, guacamole, salsa, etc. Enjoy!
