Chicken Picante


I love making this dish.  I can throw it in the oven quick when I get home from work and by the time I change and prepare the rest of the meal, the chicken is done.

Yield:  4 servings

4 skinless, boneless chicken breasts

1 cup chunky salsa

1/4 cup dijon mustard

1/4 cup sour cream

Preheat oven to 375 degrees and spray a 9x13inch baking dish with cooking spray. Place chicken breasts in prepared pan. Mix the salsa, mustard and sour cream and pour over the chicken.  Cover pan with foil and bake 40 minutes.  Remove foil and cook another 10-15 minutes. Serve with tortillas and beans or salad and steamed vegetables.

*Recipe assumes chicken is frozen (I buy the 20 pound bags of frozen chicken at Costco).  If you are using thawed chicken, reduce the initial cooking time to 25-30 minutes.

*You can also add 1 cup of your favorite cheese during the final stage of cooking.  My family eats cheese on EVERYTHING.
